Alta Langa Docg Metodo Classico Brut

Vintage available: 2020

Varietal: 100% Chardonnay
Growers location: Monforte d’Alba, Novello and Monchiero at an average altitude of 350 m asl (Brut).
Harvest: 100% by hand in small boxes of about 18 kg
Harvest period: third decade of August
Vinification and ageing: soft pressing of the whole bunches and use of only the first fraction of the must obtained (flower must).
Fermentation at controlled temperature (18 °) in stainless steel for 10-15 days and subsequent stay of the base wine still on its lees at low temperature until the following spring.
Tirage (“prize de mousse”) in spring for the second fermentation: the bottles are sealed with a crown cap and placed, stacked and protected from light, inside the cold underground cellars (12 °) for a long period of aging on fine lees (at least 30 months).
Degorgement: October 2022
Alcohol: 12.5%

TASTING NOTES

Color: straw yellow with golden reflections
To the eye: creamy, fine and evanescent foam
On the nose: fruity notes of white pulp peach with hints of toasted, dried fruit and bread crust
On the palate: marked creaminess on the palate, ample and enveloping, with a persistent, sapid, balanced and pleasant aftertaste

Wine to be tasted with: appetizers, first and second courses of the Piedmontese tradition. Vegetable flan, fondue, tajarin with white truffle, grilled fish and vegetables, mixed fried food, cheeses accompanied by jams. Ideal with finger food, sushi and sashimi during aperitifs and festive occasions.
